Sweet Roasted Onion Spread

Easy to make and great for parties.

1 whole garlic
2 small sweet onions, peeled and quartered
1 tablespoon olive oil
1 teaspoon sea salt, divided
1 tablespoon soy sour cream
2 tablespoons cilantro, chopped
1 tablespoon lime juice
Preheat oven to 425 degrees.

Remove papery skin from garlic head – do not peel or separate cloves. Slice the very top off of the garlic head. Place in a piece of aluminum foil, drizzle with half the olive oil, and wrap foil until the entire head of garlic is covered. Place on a baking sheet.

Place the onions in a separate piece of foil, drizzle with the remaining olive oil, sprinkle with salt, wrap the foil around onions until covered and place on the same baking sheet. Roast 1 hour, or until onions are golden brown. Remove from oven and allow to cool 10 minutes.

Remove onions from foil and place in a bowl. To remove the roasted garlic cloves from the head of garlic, use a small spoon or your fingers to scoop out each clove. You may have to peel off some of the skin so you might want to allow garlic to cool a few more minutes. Place the cloves in the same bowl with the onions.

Add remaining ingredients to the bowl and blend. You can either serve this at room temperature or allow the flavors to meld in the refrigerator (about an hour, covered).

This spread goes great with warm pita bread, crackers and plain or onion bagel crisps.
