Roasted Red Bell Pepper Hummus

Try this tasty appetizer – it is very easy to make and great as a dip or sandwich spread – perfect fare for a party.

3 garlic cloves, peeled
1 can white soybeans (15 oz)
1/2 cup roasted red bell peppers, drained or 1 whole roasted red bell pepper, seeded (if making your own peppers)
3 Tbs lemon juice
1 Tbs tahini (sesame-seed paste can be found in Asian markets and some grocery stores)
½ tsp salt 
1/4 tsp onion powder dash cumin

Drain the soybeans, but reserve the liquid. Mince garlic in the food processor. Add the bell peppers and pulse until well mixed.

Add soybeans, 2 Tbs lemon juice, 1 Tbs of the reserved liquid from the soybeans, tahini, salt, onion powder, and cumin and puree until smooth.

Taste and add more lemon if desired or more of the reserved liquid until you have a smooth paste.

Serve with warm pita bread or your favorite crackers.
