Roasted Edamame w/ Garlic & Olives

16 ounces edamame, frozen or fresh
1/4 cup green olives, quartered
5 cloves garlic, minced
2 teaspoons herbs de provence
1 teaspoon sea salt, or to taste
2 1/2 tablespoons extra virgin olive oil
1/8 cup italian parsley, minced

Preheat the oven to 375 degrees. Combine all ingredients except for the parsley in an oven-proof bowl. Cover with foil and bake for 30 minutes or until the edamame are almost tender. Uncover and continue to roast until the edamame have started to shrink and “crinkle” – about 20 more minutes.
