Mexican Wedding Cookies

Rich cookies traditionally served at weddings and other festive occasions.

Oven at 350 degrees

1 cup butter
½ cup powdered sugar, sifted
1 tsp Mexican vanilla (regular vanilla extract can be used)
1 ½ cups flour, sifted
½ cup soy flour, sifted
1/4 tsp salt
1 cup pecans, finely chopped
powdered sugar to decorate

Cream butter, ½ cup powdered sugar and vanilla. Add flours, salt and nuts and blend thoroughly.

Shape the mixture into two long rolls – about 1 ½” in diameter. Wrap each roll in waxed paper and refrigerate for 5 hours or overnight.

Unwrap each roll and cut into 1/4″ slices. Bake on an ungreased baking sheet (space 1/4″ apart) for 15 – 20 minutes, or until the cookies are lightly browned.

Remove from the cookie sheet and roll in the powdered sugar – do not let cool or the sugar will not adhere to the cookie.
