Mexican Hot Chocolate

A very easy recipe with only three ingredients – the secret is in blending the chocolate. This is one of our favorite beverages!

2 cups vanilla soy milk
6 squares Mexican hot chocolate (usually in the ethnic isle of your grocery store)
2 cinnamon sticks, optional

In a sauce pan, warm the soy milk and chocolate squares until the chocolate is melted. Allow to cool to room temperature. Pour the mixture into a blender and carefully blend (hot liquids can overflow, so be sure the mixture is cool enough to handle) Blend until smooth. Return the mixture to the same sauce pan and reheat. Pour into mugs and top with a dash of cinnamon or for a special touch place a cinnamon stick in each mug. Makes 2 servings.
