German Apple Pancake

Oven at 425 degress

2 eggs, plus 1 egg white
3/4 cup flour 
½ tsp salt
1 cup soymilk
7 Tbs soy margarine
1 large green apple, peeled and thinly sliced (Granny smith is a good choice) powdered sugar, for garnish

Combine eggs, egg white, flour, salt and soy milk – mix until well blended. Heat 3 Tbs soy margarine in an iron skillet or ovenproof pan. Add the apple slices and cook until crisp-tender.

Pour batter over the apple slices and bake until the edges are browned and the pancake is puffy. Remove from the oven and invert pancake onto a plate. Top with the remaining soy margarine (optional) and sprinkle with powdered sugar.

Serves 4
