Oven at 350 F
2 (18 oz) packages refrigerated chocolate chip cookie or oatmeal chocolate chip, slice and bake cookie
12 oz silken tofu, firm
1 cup sugar
1 tsp vanilla
Soften one roll of cookie dough. Spray the bottom of a 9 x 13 baking pan with non-stick spray.
Line the bottom of the pan with the softened cookie dough – press in so the dough covers the entire bottom of the pan.
In a food processor, combine tofu, eggs, sugar, and vanilla and blend until smooth. Spread mixture over the cookie dough in the pan. Drop the second roll of cookie dough by teaspoon on top of the filling.
Bake for 40 – 45 minutes. Makes 36 bars
