Chocolate “Peanut Butter” Cookies

Oven at 350 degrees

2 oz unsweetened chocolate
4 oz semisweet chocolate
1 cup milk chocolate chips or semisweet chocolate chips 
½ cup soynut butter (creamy)
2 TBS soy margarine
½ cup flour
1/4 tsp baking powder
1/8 tsp salt
2 eggs
½ cup sugar
1/4 cup brown sugar
1 tsp vanilla
1 cup chopped roasted soynuts 
In a double broiler, melt 2 oz unsweetened chocolate, 4 oz semisweet chocolate and butter until melted and smooth – stir often. Remove from heat and allow to cool to room temperature.

Mix flour, baking powder and salt – set aside. In a large bowl beat eggs, white and brown sugars and vanilla until blended. Add cooled chocolate mixture and blend. Beat in the dry ingredients – do not overstir. Gently fold in the chocolate chips and soynuts.

Drop by tablespoonful onto a ungreased baking sheet. Bake for 10 – 12 minutes, or until cookies are just set. Transfer to wire rack and allow to cool.

Makes 3 dozen cookies (if you don’t eat too much of the dough!)
