Chocolate Chippers

What better to make on a chilly winter day?

Oven at 375 F

3/4 cup white sugar
3/4 cup packed brown sugar
2 sticks (1 cup) (or soy margarine)
1 large egg
2 cups flour
1/4 cup soy flour
1 tsp baking soda
½ tsp salt
12 oz semisweet chocolate chips (or 6 oz semisweet and 6 oz milk chocolate chips)
3/4 cup roasted soynuts

Melt half the butter (1 stick). Set aside. Allow the other stick to soften.

Mix sugars, egg and softened butter. Stir in flours, baking soda and salt. The dough will be stiff, but blend as best you can. Add in melted butter and stir again.

Stir in chocolate chips and soynuts.

Drop dough by rounded tablespoons (or use a small cookie scoop) on an ungreased cookie sheet.

Bake 6- 9 minutes, until light brown – centers will be soft. Cool 1 minute and remove cookies to cool completely.

Makes 3 ½ dozen, depending on how much dough you eat first!
