Autumn Bake

A wonderful variation of baked yams and perfect for your Thanksgiving table.

Oven at 350 F

1 yam
1 small butternut squash
1 cup firm tofu, drained and cubed
1 Granny Smith apple, peeled and cubed
1/4 cup light brown sugar
1/4 cup water
2 Tbs butter, melted

To prepare the yam – scrub but do not peel. Cut into 1″ cubes

To prepare the squash – scrub, cut in half and remove the seeds/fibers. Cut into same size pieces as the yam

Place the yam, squash, tofu and apple in an oven proof dish. Mix the water, brown sugar and melted butter and pour over mixture.

Cover with foil and bake for 30 – 45 minutes, until ingredients are tender. When ready to serve, you can sprinkle nutmeg or cinnamon, if desired, to taste.

Serves 3- 4
