Mixed Nut Tart

For Crust:
1 1/4 cup flour
½ cup soy margarine
2 TBS packed light brown sugar
1 egg

Mix all ingredients until dough forms – press into the bottom and up the sides of an ungreased 11″ tart pan. Set aside

For Filling:
12 oz mixed nuts (walnuts, pecans, soynuts, filberts – your choice, but these work best)
½ cu sugar
1/3 cup soy margarine or butter
3/4 cup light corn syrup
3 eggs
1 tsp vanilla

Preheat the oven to 375 degrees. Sprinkle the mixed nuts over the unbaked crust.  Mix the margarine, corn syrup, eggs and vanilla until well blended. Pour over the nuts.  Bake until the center is set, approx. 30 minutes. Allow to cool slightly (or you can serve the next day, chilled). You can add a sprinkle of powdered sugar or whip cream on top!
