Bourbon Balls

Perfect for parties and to give as a gift from your kitchen…

1 cup semisweet chocolate chips
1/4 cup white sugar
3 TBS light corn syrup
1/3 cup bourbon
2 1/3 cups finely crushed vanilla wafers (about 50 wafers)
1/2 cup finely chopped roasted soynuts (or walnuts) powdered sugar, finely chopped nuts, sprinkles for decoration

In a double broiler, melt chocolate. Remove chocolate from heat and add sugar, corn syrup and bourbon. Stir until well mixed.

Add wafers and nuts to chocolate mixture mix until completely blended. Let the chocolate mixture sit for 20 minutes.

Shape into 1″ balls and roll in powdered sugar, crushed nuts or sprinkles. *In the past I have rolled the shaped balls in cocoa – bad idea. While it looks very pretty, the cocoa dust usually moves about in someone’s mouth and causes a bit of coughing. Of course, that could be the bourbon!

Store in an airtight container for 5 – 7 days before serving or giving as a gift. This will help “mellow out” the bourbon flavor. But, hey if you want to serve them strong – you can do that too!
