Caramel Bananas w/ Soynuts

Oven at 400 degrees

2 ripe bananas
1/4 cup dark brown sugar
2 TBS butter or soy margarine
1 tsp boiling water
1/4 cup chopped roasted soynuts
Vanilla ice cream or nondairy “ice cream”, to serve with bananas

Peel bananas and half (lengthwise) – place in an 8 x 8 or round baking dish – cut side facing up.

In a saucepan, combine sugar and butter – cook until melted, over medium heat. On high heat, add the boiling water and boil for 3 minutes, until caramel is thickened. Pour over the bananas and bake for 15 minutes, or until caramel is bubbling. Place two banana halves on each plate, sprinkle with soynuts and serve with the ice cream.

Serves 2.
