Gingerbread Cake (Gluten-Free)

2 1/3 cups GF flour mix*
2 teaspoons ground ginger
1 teaspoon cinnamon
1/4 teaspoon cloves
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup soy margarine, melted
1/3 cup light brown sugar
1 cup molasses
1 egg
3/4 cup hot water

Preheat the oven to 325 degrees. Grease and flour (w/ GF flour) a 9 x 9 baking pan.

Combine the GF flour, ginger, cinnamon, cloves, baking soda and salt – set aside.

Combine the soy margarine, brown sugar, molasses, egg and water. Add to the dry mixture and blend until well mixed.

Pour the batter into the pan and bake about 40 minutes, or until a toothpick inserted in the center comes out clean.

Cool slightly before serving.

2 cups potato starch flour 
1 cup tapioca flour
