Penne & Edamame Salad

Very easy to prepare and soy good for you! Another one of the salads samples out at the MeatOut event at Whole Foods (in San Antonio). People were amazed at how much they liked the edamame, which are sweet and buttery.

12 oz soy pasta*
2 cups shelled edamame
1/4 cup olive oil
2 Tbs red wine vinegar
1/2 tsp garlic salt
1 Tbs fresh lemon juice
1/3 cup Italian Blend Soy Cheese
Salt & Pepper, to taste

*Soy pasta is very hard to find at most retail stores. I love to use Soy 7 pasta, which has 7 grams of soy per serving!. You can pruchase it online or by phone from DixieDiner. It tastes like regular pasta and holds up perfectly. It is not chewy and “heartly” like many wheat pastas.

Prepare the pasta according to directions. Drain and set aside.

To prepare the edamame, bring a pot of water to boil. Add the shelled edamame and bring back to a boil. Cook for five minutes. To keep the bright green color, you can shock the cooked edamame in ice water – simply use a slotted spoon to transfer the edamame from the pot to a medium bowl filled with ice water. Cool and drain.

To prepare the dressing, whisk the olive oil, red wine vinegar and garlic salt and lemon together.

Mix the pasta and edamame together. Pour the dressing over the mixture and mix well. Add the soy cheese, mix and season with salt and pepper to taste.

Serves 4 – 6.
